Our cooking is entirely gluten free, not because we set out to create a gluten-free restaurant, but rather because all our rotisserie specialties from whole roasted fish to poultry, lamb and beef are all simply seasoned and roasted over open flames, with sauces and garnishes all served on the side. There just isn’t much place to add any gluten, even if we wanted to. Our salads and other fresh vegetables vary with the seasons and are also organic and gluten free. Our stocks are part cooking ingredient, part beverage and part "souperfood".

Free of preservatives and fillers, broths are the real, unadulterated deal. They’re high in protein, gelatinous when cold, fragrant when hot, loaded with nutrients and so tasty you won’t believe they’re good for you. They are packaged for easy pouring and storing so you can enjoy all the benefits of fresh, slow-cooked bone broth in just minutes.

We pride ourselves on using the classic technique practiced for centuries and perfected by the great Chefs throughout history. We use only bones, joints and feet from pastured animals so our broths contain the best nutrients available. Our broths simmer slowly for 24-48 hours until every last nutrient has been extracted.

All broth is free of gluten, dairy, soy, salt, preservatives, MSG, added flavorings and added colorings.

We use bones from animals that were humanely raised on open pastures with clean diets free of antibiotics, hormones and grains.

We only use organic vegetables and herbs and our water is filtered, ensuring the final product is as pure and flavorful as it is packed full of vitamins, minerals and gelatin.
